I grew up with a sweet cornbread that my dad would make. If I ever used a box mix for cornbread, I'd have to add a bit of sugar to make it sweet. This cornbread is moist and has the perfect amount of sweetness to it!
SWEET CORNBREAD
INGREDIENTS:
1 1/2 cups Flour
2/3 cup Sugar
1/2 cup Yellow Cornmeal
1 Tbsp Baking Powder
1/2 tsp Salt
1 1/4 cups Milk
2 Eggs
1/3 cup Vegetable Oil
3 Tbsp melted Butter
INSTRUCTIONS:
Preheat oven to 350 degrees. Grease 8x8 inch baking pan.
Combine dry ingredients in a medium bowl.
Combine wet ingredients in a small bowl.
Add wet mixture to flour mixture and stir until just blended.
Pour into baking pan and bake for 35 minutes, or until toothpick inserted comes out clean.
You can also make these into muffins. Just use muffin liners, fill each 2/3 full, and bake for 18-20 minutes.
