Nothing twisty about these bad boys! You can have the taste of a soft pretzel without the hassle of twisting! Top with salt, cinnamon sugar, parmesan cheese; the options are endless!
PRETZEL BITES
makes 80 pretzel bites
INGREDIENTS:
3/4 cup Water, warm
3/4 cup Milk, warm
21/4 tsp Yeast (1 package)
2 Tbsp Brown Sugar
11/2 tsp Salt
4 cups All-Purpose Flour
6 cups Water
1/3 cup Baking Soda
1 Tbsp Butter, melted
Coarse Salt for sprinkling
INSTRUCTIONS:
Combine warm water, warm milk, yeast, brown sugar and salt in a small bowl. Let sit for 5 minutes.
Add flour and mix on low until incorporated.
Knead dough until it is smooth and elastic about 5-6 minutes. Add flour as needed.
Oil the inside of a bowl and place dough inside bowl.
Cover and let rise for 1 hour.
Combine 6 cups of water and 1/3 cup baking soda in large pot and stir to dissolve. Bring to a low boil just as the dough has finished rising.
Divide the dough into 8 balls. Roll each ball into a 10 inch rope. Use scissors or a knife to cut into eight bites.
Drop pretzel bites into the baking soda water. As those 8 pieces are in the water, roll and cut the next 8. By the time you have finished the next 8, take the bites from the water out and place them on a baking sheet.
Bake at 450°F for about 10 minutes or until golden brown. Brush with melted butter and sprinkle with coarse salt.
