Toasted Almond & Garlic Butter Quinoa

Growing up, we occasionally had this boxed couscous mix along side chicken or fish. It came in different flavors, but my favorite was the Toasted Almond and Garlic Couscous. Wanting some more protein in the dish, I created this version with quinoa instead! It's warm flavors are filling and the perfect side to any fish or poultry.



 

TOASTED ALMOND & GARLIC BUTTER QUINOA


INGREDIENTS:

  • 2 Tbsp Sliced Almonds

  • 2 Tbsp Butter

  • 1 clove Garlic, minced

  • 1/4 tsp Garlic Powder

  • 1/2 tsp Dried Parsley Flakes

  • 2 cups Quinoa, cooked (I like Tri-Color for it's higher protein content and crunchier texture)

  • Salt and Pepper to season


INSTRUCTIONS:

  1. Over medium heat, toast almonds in a non greased skillet until lightly golden brown and set aside in a bowl.

  2. In a medium sized skillet, melt butter.

  3. Add garlic, garlic powder, parsley, and cook for 1 minute.

  4. Add cooked quinoa and saute in butter for 3 minutes.

  5. Take off heat and mix toasted almonds into quinoa.
