When I was younger, I loved when my mom would roast broccoli, brussels sprouts, potatoes, etc. Something about lightly roasting them brings out a light and fresh flavor. This roasted broccoli uses lemon, garlic, and some Parmesan cheese to add to the light and fresh flavor! Sprinkle some salt and freshly cracked pepper on top and the whole pan will be gone in no time.
ROASTED LEMON GARLIC BROCCOLI
serves 4
INGREDIENTS:
1 lb Broccoli Florets, fresh
1 Tbsp Olive Oil
Juice of half a Lemon (or 1 Tbsp of Lemon Juice)
2 cloves of Garlic, minced
1/4 cup Parmesan Cheese, grated
Kosher Salt to sprinkle
Coarsely Ground Pepper to sprinklw
INSTRUCTIONS:
Pre-heat the oven to 425°F.
Place parchment paper on a baking sheet.
Cut Broccoli into small pieces and place on baking sheet.
Add oilive oil, lemon juice and garlic to broccoli. Mix to coat the broccoli.
Sprinkle parmesan cheese, salt, and pepper on top
Bake for 12-15 minutes.
