Flour Tortillas

Another Chevys Fresh Mex recipe for you! If you are sick of recipes from here, then you have obviously never been here!


Whenever we went as a family, we always sat next to the big El Machino. You probably already guessed, and are right, that this is the machine that presses out thousand of fluffy flour tortillas, and smells like heaven. At least I assume that what it smells like there!


When we were little, the waiters would bring us kids a little ball of tortilla dough to play with. So as soon as I had mixed up the dough, all the memories came back with one sniff of the soft dough.


 

FLOUR TORTILLAS

makes 16 Tortillas


INGREDIENTS:

  • 6 cups All-Purpose Flour

  • 1 tsp Baking Powder

  • 1/2 tsp Salt

  • 1/2 cup Shortening

  • 2 1/2 cups Water, warm


INSTRUCTIONS:

  1. In the bowl of a mixer, combine flour, baking powder, and salt.

  2. Add shortening and turn mixer on low.

  3. Slowly add water.

  4. Mix on low for about a minute, or until a soft but not sticky dough forms. (add more flour if needed)

  5. Scrape the dough out and form a ball.

  6. Divide into 2 equal pieces, cover with plastic wrap, and let rest for 20 minutes on the counter.

  7. Divide and shape each piece into 8 equal balls. (Making 16 balls)

  8. Using a floured rolling pin, roll each ball into an 8-inch tortilla.

  9. Stack the tortillas on a baking sheet apart from other tortillas, or stacked with plastic wrap between each tortilla.

  10. Let rest for 10 minutes.

  11. Heat a skillet or cast-iron pan on medium high heat. Lightly spray with cooking spray.

  12. Cook the tortillas on the skillet for 1 minute on each side until light brown spots form on the surface.

  13. Keep in a tortilla warmer or in a kitchen towel to keep warm.

  14. Serve warm!
