Homemade Tortillas are just one of those things in life that bring pure joy and happiness. It is the simple things in life my friends.
I have never been a fan of store bought corn tortillas. I think they are dry and not worth it. However, a soft and fresh tortilla right out of the pan is to die for. Mmmmmm!
You can either use a tortilla press and line it with thick plastic (like a ziplock bag cut open) or just use the ziplock and a pie pan to press.
CORN TORTILLAS
makes 18 corn tortillas
INGREDIENTS:
2 cups Instant Corn Masa (I use Maseca, Instant Corn Masa Flour)
1 1/2 cups Water
Pinch of Salt
INSTRUCTIONS:
Combine Masa with water.
Mix until a soft dough is formed. (If the dough feels too dry, add water a tablespoon at a time.)
Divide dough into 18 pieces and shape into balls.
Cover dough with damp cloth to keep dough moist.
Line tortilla press with ziplock bag cut open or use ziplock and pie pan.
Heat pan (I love using cast iron for these) on medium high heat. Don't grease the pan.
If using pie pan, press down on the ball and rotate the pie pan while pressing down to flatten. Press and cook one or a few at a time.
Carefully peel the plastic off one side of the tortilla when holding the tortilla, peel the other side of plastic off.
Cook each side for about 45 seconds to a minute.
Cover tortillas with a cloth or towel to keep soft and warm.
