This Thai Peanut sauce is so easy to whip up and serve over everything! Sometimes we have it with veggies and rice, or ramen noodles and stir-fry. It also pairs perfectly with sweet potato noodles, trust me! We have even used the sauce as a base for a Thai Pizza for our weekly Pizza Nights!
THAI PEANUT STIR-FRY
Serves 4
INGREDIENTS:
Stir-Fry:
1 Tbsp Olive Oil
1 clove Garlic, minced
1/4 cup Onion, chopped
1 lb frozen Stir-Fry Vegetables
Sesame Seeds (to garnish)
Thai Peanut Sauce:
1/2 cup Peanut Butter
1 tsp Coconut Oil
2 Tbsp Rice Vinegar OR White Vinegar
2 Tbsp Soy Sauce
1/2 tsp Sesame Oil
1/4 tsp Ground Ginger
1/2 tsp Red Pepper Flakes
1/2 tsp Brown Sugar
1 clove Garlic, minced
1/2 tsp Lime Juice
Pinch of Salt
1/4 cup Water (just enough to thin the sauce)
INSTRUCTIONS:
Stir-Fry:
In a medium skillet, heat up 1 Tbsp of oil.
Add garlic and onions and cook until fragrant, about 1 minute.
Add frozen stir fry mix and 1 Tbsp of soy sauce.
Cover and stir occasionally until fully cooked.
Once cooked through, season with salt and pepper.
Serve over ramen, noodles, sweet potato noodles, zoodles, etc. with Thai Peanut Sauce.
Sprinkle with sesame seeds.
Thai Peanut Sauce:
Combine peanut butter, vinegar, soy sauce, sesame oil, ginger, red pepper flakes, brown sugar, and garlic in a small bowl.
Slowly whisk in water until desired consistency is reached.
