BBQ Salmon Bowls + Christmas Bingo Cards

These BBQ Salmon Bowls have been a favorite of our for years but more so this year as our boys love Salmon and mango! This meal comes together quickly and packs in lots of nutrition! We like to use Quinoa over Rice for the higher protein content but both taste great!



BBQ SALMON BOWLS WITH MANGO AVOCADO SALSA


INGREDIENTS:

Salmon:

  • 1-2 lbs Salmon, about 3-4 filets

  • 11/2 TBSP Brown Sugar

  • 2 tsp Smoked Paprika

  • 1 tsp Garlic Powder

  • 1/2 tsp Chili Powder

  • 1/2 tsp Salt

  • 1TBSP Olive Oil


Mango Avocado Salsa:

  • 1-2 Mangos, diced

  • 1 Avocado, diced

  • 1/4 cup Cilantro, chopped

  • 1/4 cup Red Onion, diced

  • 1 tsp Honey

  • 2 TBSP Lime Juice

  • Salt to taste

  • 1/2 Jalapeno, seeded and diced (optional)


Serve with:

  • Quinoa or Rice


METHOD:

  1. Mango salsa: Toss all ingredients in a bowl to combine. Taste and add more honey or salt if needed.

  2. Cook your grain: Cook your quinoa or rice according to directions! We love to cook quinoa in the Instant Pot. (1 cup of quinoa rinsed, 11/2 cups of water in the Instant Pot on High Pressure for 1 minute. Then let it naturally release pressure, about 10-15 mins and ta-da, the best quinoa!)

  3. Salmon: Preheat the oven to 425 degrees. Line a baking sheet with parchment paper or silicone baking mat.

  4. Mix the spices and the olive oil to make a paste. Place the salmon skin side down (if it has skin on it) on the baking sheet. Rub the paste liberally over the top part of the salmon. Bake for 10 -15 minutes depending on the thickness of your salmon and your desired doneness. I just cook it until it reads 145°F.

  5. Serve: Serve salmon on a bed of quinoa or rice and load it up with the mango avocado salsa!
