This galette is easier than pie and soo good! The combination of strawberry and peach is superb and tastes just like summer,...if you could bottle up how summer tastes, minus the mosquitoes and humidity.
STRAWBERRY PEACH GALETTE
makes 1 galette, serves 4-8
INGREDIENTS:
1 Peach, sliced thinly
1 cup of Strawberries, sliced
1 Tbsp Sugar
1/2 tsp Vanilla Extract
1 disc of Pie Crust, or 1 sheet of pie dough
1 Egg, beaten for egg wash
Sugar for garnishing
INSTRUCTIONS:
Pre-heat oven to 425°F.
Place parchment paper on a baking sheet.
Combine sliced peaches and strawberries in a bowl.
Sprinkle the sugar and vanilla over and carefully mix. Let sit while you roll out the pie crust.
Roll out the pie crust to about 12 inches in diameter.
Place pie dough onto baking sheet.
Place the fruit in the middle of the crust, leaving about 3-4 inches on the outside clear.
Fold the extra crust over the fruit, creating pleats as you go.
Brush with egg wash and sprinkle with sugar.
Bake for 20-25 minutes or until the crust is golden brown.
Serve warm with ice cream or whipped cream.
NOTES:
You can store remaining galette in the fridge for several days.
You can substitute apples, berries, stone fruit, etc.
