I remember making fried rice as a kid. I would find left over rice in the fridge, some frozen peas and carrots, throw in some eggs, soy sauce and done! You can go vegetarian or use whatever meat, ham, chicken, shrimp, ground beef, or even steak.
While I love any of those meats in my friend rice, I am a bit biased to spam. Spam must be the official meat of Hawaii, according to Beth. McDonalds breakfasts in Hawaii include a fried egg, rice, and spam. Bring on the Hawaiian breakfast!
Thanks to my sister for attending BYU-Hawaii, I have had the opportunity to live the island life a couple times. My family loves all things Hawaiian. Plates of garlic shrimp, snorkeling, shave ice, Loco Moco, Macadamia Nut Pancakes, Taro anything, mmmm. There is definitely a more relaxed way of life there, which makes it the perfect vacation!
SPAM FRIED RICE
INGREDIENTS:
6 oz Spam, cubed (half a can)
1 clove Garlic, minced
2 tsp Bacon grease or Oil
3 cups cooked Rice (leftover, but you can also cook up a pot and use it fresh)
6 oz Frozen Peas and Carrots
2 1/2 tsp Teriyaki Sauce
2 1/2 tsp Soy Sauce
1/8 tsp White Pepper (you can sub Black pepper)
3 Eggs
INSTRUCTIONS:
Cook spam until browned in a large skillet.
When it is almost brown, add garlic and cook 1 minute.
Add bacon grease, let it heat up a bit, then add rice.
Cook rice for 3 minutes.
Add peas and carrots, teriyaki sauce, soy sauce, and white pepper.
Cook for 3 minutes.
Push all the mixture to one side of the pan and crack eggs into empty side.
Scramble with spatula and stir until almost cooked.
Once egg is almost cooked, mix it into the whole pan.
