PB Apple Oatmeal Bake

When the cold months hit, I struggle eating my cold staple breakfasts like smoothies and yogurt. To cure those cold breakfast time blues, we enjoy this filling and delicious breakfast bake. Don't like apples? Replace them with berries! Don't have fresh fruit? Try frozen fruit!


 

APPLE OATMEAL BAKE

serves 4


INGREDIENTS

  • 1 Banana, mashed

  • 1 Apple, diced into small bite-sized cubes

  • 1/2 cup Almond milk (or your choice of milk)

  • 1/2 cup Kodiak Cakes Flapjack & Waffle Mix

  • 3/4 cup Old Fashioned Oats

  • 2 Tbsp Ground Flaxseed

  • 1/2 tsp Cinnamon

  • 1/2 tsp Vanilla Extract

  • 1/2 tsp Baking Powder

  • Pinch of Salt

  • Peanut Butter or Almond Butter to drizzle on top


METHOD

  1. Preheat oven to 350°F.

  2. Grease an 8x8 baking pan or 4 spots on a large muffin tin.

  3. In a medium sized bowl, mash banana.

  4. Add in the diced apples, almond milk, Kodiak mix, oats, flaxseed, cinnamon, vanilla, baking powder, and salt.

  5. Mix until well combined.

  6. Pour into greased pan.

  7. Bake for 15-20 minutes until they are firm and just starting to brown.

  8. Remove from oven and drizzle peanut butter on top.
