Lemon bars are one of our favorite summer treats! Cool, refreshing, and the nostalgic tartness of summers with lemon and powder sugar all over little faces.
To make this recipe even easier, you can whip up the lemon egg mixture in the blender!
LEMON BARS
makes a 9 x 13 pan
INGREDIENTS:
1 cup Butter, room temperature
1/2 cup Powdered Sugar
2 cups Flour
1/2 tsp. Salt
4 Eggs
6 – 7 tbsp. Lemon Juice
1 3/4 cups Sugar
1/3 cup Flour
Powdered Sugar for topping
INSTRUCTIONS:
Mix butter, powdered sugar, flour and salt with a pastry cutter.
Grease a 9 x 13 pan.
Press the crust mixture into the 9 x 13 pan.
Bake at 350°F for 20 minutes. (Do NOT let it get brown, keep it light!)
Cool slightly.
In a blender, blend eggs, lemon juice, sugar, and flour until frothy. (30 seconds or longer)
Pour over the crust.
Bake the lemon bars at 350°F for 20 minutes.
Remove from oven and let cool.
Dust with powdered sugar.
