There is something about Chocolate Chip Pancakes that seem to make any day better. Ryan took me to one of his favorite restaurants, Potato Shack, on our Honeymoon for the "manhole sized" Chocolate Chip Pancakes he had talked so much about. Thankfully, after all that talk, they lived up to their terrific reputation!
Since we can't always frequent Potato Shack, we had to come up with how to cook this baby at home! After few failed flipping tries, we nailed it and can't wait for you to nail it too!
GIANT CHOCOLATE CHIP PANCAKES
makes 10 regular size pancakes or 2 large pancakes
INGREDIENTS:
1 1/4 cup All-Purpose Flour
2 Tbsp Sugar
2 tsp Baking Powder
1/4 tsp Salt
1 Egg
1 cup Milk
2 Tbsp Vegetable Oil
1 tsp Vanilla Extract
Chocolate Chips
INSTRUCTIONS:
Combine the flour, sugar, baking powder, and salt in a bowl and mix.
In another bowl, combine the egg, milk, oil, and vanilla until well combined.
Add the wet mixture to the flour mixture and stir until just combined. Batter will be a bit lumpy.
Grease and heat pan over medium heat.
Pour half the batter (about 1 1/2 cups of batter) onto the pan.
Scatter a handful of chocolate chips all over the batter.
Cook until the pancake starts bubbling on top about 3 minutes, then flip the pancake. (We have found that flipping the pancake in the air has the best success!)
Cook for an additional 1-2 minutes or until the pancake is cooked through.
NOTES:
If making normal sized pancakes;
Pour 1/4 cup pancake batter on the hot pan. Scatter chocolate chips all over the batter.
Cook until the pancake starts bubbling on top about 2 minutes, then flip the pancake.
Cook for an additional 1-2 minutes or until the pancake is cooked through.
