Quinoa is the protein underdog. I love my Tri-Color Quinoa because it has 6 grams of protein per 1/4 cup. It is also the most complete plant-based protein, supplying essential amino acids. Go quinoa!
This salad is not only DELICIOUS, but packs some protein in without adding meat or beans. I love throwing in sourdough croutons from some leftover sourdough bread and topping it with Olive Garden Italian Salad Dressing.
FETA QUINOA SPINACH SALAD
INGREDIENTS:
2 cups Spinach
2/3 cups Quinoa
2 oz Feta Cheese
1 Tbsp Parmesan Cheese
1 Tbsp Toasted Almonds
Croutons
Italian Salad Dressing
INSTRUCTIONS:
Place spinach in a bowl.
Add quinoa, cheeses, almonds, and croutons.
Top with salad dressing.
