Having lived in Louisiana for a time, I came to love some good ole Cajun food! Red Beans and Rice is the easiest dish to whip up and not only fill your belly with soulful flavors but also your house! This recipe makes a lot so invite some friends over or freeze your leftovers for when you're in need of a big bowl of comfort food! And don't forget the cornbread!
CROCKPOT RED BEANS & RICE
serves 10-12
INGREDIENTS:
1 pound Dried Red Beans
1lb Sausage, cut into bite sized pieces
2 -14.5oz cans Chicken Broth
7 cups Water
1 Green Bell Pepper, chopped
1 medium Onion, chopped
3 Celery Stalks, chopped
3 Garlic Cloves, chopped or minced
1 Bayleaf
2 Tbsp. Creole Seasoning (I use Tony’s Seasoning)
Cooked Rice
INSTRUCTIONS:
Combine all ingredients except Rice in a Crockpot.
Cook on High for 6-8 hours until the beans are tender.
Serve over rice.
