In honor of May 4th (AKA: Star Wars Day), we broke out my birthday present: a Star Wars Cookbook from Galaxy's Edge! Thank you Mom and Dad!
May the Force be with you as you try this bounty hunter favorite from a galaxy far far away!
CHICKPEA CAKES
INGREDIENTS:
15 1/2 oz can Chickpeas, rinsed
1 clove Garlic
1 tsp ground Cumin
1/2 tsp Salt
1/2 tsp Black Pepper
A pinch of Cayenne or Chili Powder
A pinch of Dried Red Pepper Flakes
1 Egg
1/4 cup All-purpose Flour
INSTRUCTIONS:
Combine chickpeas, garlic, cumin, salt, black pepper, cayenne pepper, and red pepper flakes in a food processor. Pulse until combine
Add egg and mix until smooth.
Add flour and blend until it creates a thick paste.
In a skillet, heat a little bit of oil over medium heat.
Spoon a 1/4 cup of the mixture into the hot skillet and flatten out with an oiled spoon.
Cook the cakes for a few minutes on each side until golden brown.
Serve with Black Bean Humus and Cucumber Salad.
CUCUMBER SALAD
INGREDIENTS:
1/2 Cucumber, diced
1/4 cup Onion, diced
1/2 tsp Lemon Juice
1 - 2 Tbsp Cilantro, chopped
Dash of Salt
INSTRUCTIONS:
Mix all ingredients together.
