My favorite thing to get at Olive Garden is the all-you-can-eat Soup, Salad, and Breadsticks! My favorite of those four soups is the Chicken Gnocchi. Instead of going out to eat, we figured out how to make it and it's way easier than you'd think!
CHICKEN GNOCCHI SOUP
serves 6
INGREDIENTS:
2 tsp Olive Oil
1 stalk of Celery, chopped
1/2 Onion, diced
3 cloves Garlic, minced
1/2 cup shredded Carrots
3 Chicken Breasts, cooked and diced or shredded
4 cups Chicken Broth
1 tsp Poultry Seasoning
1 package Potato Gnocchi (anywhere from 13-17 ounces is perfect!)
2 cups Half and Half
1 1/2 cup Spinach, fresh and roughly chopped
Salt and Pepper to taste
Parmesan Cheese to garnish
INSTRUCTIONS:
Heat olive oil in a large pot over medium heat.
Add the celery, onion, garlic, and carrots. Cook until the onions are translucent, about 5 minutes. Add chicken, broth, and poultry seasoning. Bring to a boil.
When it begins to boil, add the gnocchi and cook for 3 minutes.
Bring the pot to simmer for 10 minutes.
Add the half and half, spinach, and salt and pepper to taste.
Turn the burner down to low and cook until the spinach has wilted. Make sure to keep the heat low or off once finished.
Serve with Parmesan cheese and Breadsticks.
