Ryan and I have loved lemon anything since we were little. In college, anytime I made anything lemon, I'd take some over to Ryan because I knew he loved lemon like me! Before we were dating I had taken him Lemon Bars and Lemon Poppyseed Scones. I even baked him a Lemon Bundt Cake for his birthday one year.
I guess all those lemony baked goods helped me out! (wink wink).
While I was studying abroad in Europe, I came across this soda called Bitter Lemon. And I drank it A LOT! I even bought some cans of it and wrapped them up in several ziplocks and brought them home on the plane.
It tastes similar to Squirt with an almost grapefruit zing to it. It is not as sweet as lemonade but has a bitter lemon taste that is WONDERFULLY....AMAZING! The bitterness comes from using the whole lemon, peel, pith, and juice. These come together with sugar and water to make the syrup which you then mix a bit into carbonated water.
BITTER LEMON SODA
makes about 2 cups of syrup
BITTER LEMON SYRUP
INGREDIENTS:
4 Large Lemons (try not to use Meyer as they are sweeter than others)
11/4 cups Sugar
2 cups Water
INSTRUCTIONS:
Wash lemons and cut into cubes.
Combine lemons, sugar, and water in a blender.
Blend until almost smooth.
Place in a medium sauce pan over medium high heat and bring to a boil.
Boil for 1 minute.
Take the pan off the heat and cover with a lid.
Let it steep for 1 hour. (Do not lift lid.)
After an hour, strain through a fine strainer.
Store syrup in the refrigerator.
BITTER LEMON SODA
INSTRUCTIONS:
Mix 8 ounces of cold carbonated water with 2-3 Tbsp of Bitter Lemon Syrup. (Depending on taste preference.)
Serve!
