If anyone knows my family, they know we frequent Disneyland quite often. A tradition we have is to get Mickey Mouse Beignets and Mint Juleps (non-alcoholic of course).
Ryan and I went to Disneyland one day on our honeymoon and of course we had to get the Beignets and Mint Juleps.
We had lots of mint in our garden this year and anyone who has ever grown mint knows it REALLY takes off! Using the mint, we made a Mint Syrup and it just happens to be the key ingredient for these Mint Juleps! Coincidence? Nope!
MINT JULEPS
makes 1 1/2 cups of Mint Syrup, using about 1 Tbsp a serving
Mint Syrup
INGREDIENTS:
1 cup Fresh Mint, chopped leaves and stems
1 cup Water
1 cup Sugar
INSTRUCTIONS:
Put the chopped mint in medium sized glass bowl, set aside.
Combine the water and sugar in a small saucepan.
Whisk to dissolve and bring to a boil.
Once it has come to a boil, take off the heat and pour over the mint.
Stir and cover with a lid or plastic wrap to steep until it cools to room temp. (Don't be tempted to peak and get a whiff, keep it closed to keep all that mint flavor in.)
Once the syrup has cooled the mint will be a dark cooked green color.
Strain and squeeze out the mint.
Use in lemonade, milkshakes, etc.
Store the remaining in the fridge.
Mint Juleps
INGREDIENTS:
1 cup Lemonade (try our favorite recipe here!)
2-4 tsp Mint Syrup (depending on how strong you want the mint flavor)
Little drop of Green Food coloring for color (optional)
Lemon or lime wedge for garnish
Maraschino cherry for garnish
INSTRUCTIONS:
Mix Mint Syrup and green food dye into Lemonade and stir to combine.
Garnish with a lemon/lime wedge, mint leaf, and a Maraschino cherry!
