I consider myself a cookie snob. Growing up, my mom made yummier cookies than anyone else. I didn't really like anyone else's cookies or store bought cookies, (with the exception of my best friend's mom). But her's were at the same stellar level of my mom's cookies!
While you could probably find a more elaborate Peanut Butter Cookie recipe, you can't beat only needing 3 ingredients when you're in a pinch or in need of a sweet treat.
Peanut Butter. Sugar. Egg.
If you want to doctor these up, you can throw in some peanut butter chips, chocolate chips, Reese's Pieces or a splash of vanilla extract.
PEANUT BUTTER COOKIES
makes about 16 cookies
INGREDIENTS:
1 cup Sugar
1 cup Peanut Butter
1 Egg
Optional Add-ins: Peanut Butter Chips, Chocolate Chips, Reese's Pieces, Vanilla Extract
INSTRUCTIONS:
Preheat the oven to 350°F.
Mix all ingredients together until dough forms.
Use a cookie scoop to scoop cookies onto baking sheet, or roll them into balls and place on sheet.
Flatten the dough balls with your hand a bit or use a fork to make the classic criss-cross pattern.
Bake for 10 – 12 minutes.
